Cheesy Stuffed Mushrooms

Pre-heat oven to 90 degrees.
Rub mushrooms clean and remove stems creating a small cavity.
Reserve he stems and finely chop along with the capsicum.
Using a fork, lightly mash the feta, parmesan, almond meal, reserved stems, capsicum and avo mash dukkah until combined.
Rub the outside of the mushrooms with olive oil.
Stuff each mushroom with the mixture, and top each with tasty cheese.
Place mushrooms directly onto oven rack, bake or 15 - 20 minutes, until soft and cheese melted.
Garnish with fresh parsley to serve.
