4 x Beef Sausages, eg: Cleavers brand, quartered
100g Sweet Mini Capsicums, quartered
150g Swiss Brown Mushrooms, halved
1 tbsp Crushed Pork Crackling
1 tsp Oregano, dried
3 tbsp Olive Oil (I used 2 of garlic infused and 1 of chili infused)
60g Rocket/Spinach Leaves
Salt and Pepper
Pre heat oven 200c
Place the sausages, capsicum and mushrooms into a small casserole dish.
Top with the olive oil mixing it through making sure everything is covered.
Sprinkle the oregano and pork crumbs over the top
Cook in the oven for approx. 25 min (or until the sausages are cooked)
Halfway through the cooking time give it a mix through
On a plate divide up the rocket leaves and top with the baked food.
Season with salt and pepper.
Top with the leftover oil in the casserole dish.
If you want to have with sauce remember to add to your macros.
Any leftovers of the baked food can be kept in the fridge in a sealed container, for a couple of days.
